    The size of the pistachio is measured by its caliber. The caliber is measured in units (number of pistachios) per ounce. An ounce is an American weight measurement equivalent to 23g, so the caliber is also measured in the number of pistachios per each 23g. The larger the pistachios, the fewer pistachios we will have in 23g, so the lower the caliber number, the larger the pistachios are.

    The pistachio is ripe when it easily detaches from the tree and the protective shell takes on a pink color and starts to open by itself. Not all pistachios on the tree ripen at the same time. It is most common to have pistachios ready for harvest and pistachios that are still green. The best approach is to harvest in two passes, giving very short vibrations, between 2 and 3 seconds, to achieve the best possible quality fruit.

    The pistachio can be harvested with umbrellas if it is planted in a framework of 6 x 5 or wider. For more intensive frameworks, the pistachio must be collected with the shaking machine or through inclined planes.
